Grand Hyatt Mumbai is searching for a dedicated and experienced Sous Chef to manage its specialized Bakery & Pastry section. Reporting directly to the Pastry Chef, the Sous Chef will play a crucial supporting role in the day-to-day operations, ensuring seamless execution of all baked goods and dessert production. This position is vital for maintaining the high standards of quality and consistency expected within a luxury hotel setting.

Responsibilities include supervising junior staff, assisting in inventory control, maintaining strict hygiene protocols, and ensuring that all pastry items, including complex baked goods, meet specifications. The ideal candidate will have strong organizational skills, proven experience in high-volume production, and a desire to contribute creatively to seasonal and special event pastry offerings.

Key Requirements

Minimum 3 years of experience as a Sous Chef or Senior Chef De Partie in a large-scale bakery or pastry kitchen. Comprehensive knowledge of professional baking and pastry arts. Proven ability to manage and train a small team efficiently. Expertise in maintaining high standards of food safety and hygiene. Experience in high-volume production of breads, pastries, and plated desserts. Proficiency in inventory tracking and ordering supplies. Strong problem-solving and communication abilities. Flexibility to work varied shifts, including early mornings and holidays. Creative input into production processes and efficiency improvements. Relevant professional culinary qualification.
